Kale Chips

These salty snacks have become increasingly popular over the years. You’ve probably seen them at your local grocery store. But did you know they’re incredibly easy to make? Simply separate the dry leaves of kale on a baking sheet and drizzle with olive oil and a sprinkle of salt. Bake at 350˚F for around 10 minutes. Voila! You’ll have crispy kale chips perfect for snacking or eating with your favorite sandwich.

“Ice Cream”

This isn’t your typical dairy variety of ice cream. However, you can mimic the taste of rich and creamy ice cream by blending frozen bananas in a food processor. You can experiment with endless flavor combinations. To make the base, slice a ripe banana into thin rounds and freeze in an airtight bag until completely frozen.

Once frozen, add the banana slices to a food processor and pulse while periodically scraping down the sides of your processor. This final step requires patience. The banana slices will undergo various stages before a soft serve consistency is reached. If your bananas appear crumbly or chunky, fear not; this is common. Keep blending until you have a rich and creamy ice cream.

Once the desired consistency is reached, you can add your flavor combinations. We like adding a small handful of frozen berries. If you want to splurge, a small drizzle of caramel and sprinkle of sea salt is a great combination.

Crunchy Chickpeas

We love this health food snack because of its flexibility. Like banana ice cream, there are unlimited flavor combinations you can adopt in this crunchy snack. To begin, rinse one can of chickpeas—also known as garbanzo beans—in a colander. Pat the beans dry. This is important! You don’t want them to steam in the oven. Toss the beans with a tablespoon of honey and two teaspoons of cinnamon. Spread them on a lined baking sheet and roast at 400˚F for about 40 minutes.
